  • We challenged chefs of three different levels - an amateur, a home cook and a professional chef - to make their versions of french fries. And then we brought in a food scientist to review their work. Which fries were the best?

                                            Oui mais non. Faut arrêter les conneries.

                                            On utilise une patate à chaire ferme, trouvez des bintjes, j'espère que vous avez ça chez vous aussi.
                                            On coupe ses frites à la forme voulue, puis on les lave deux trois fois pour enlever l'amidon. Et SURTOUT on les sèche.
                                            Deux cuissons, une à 155°C, jusqu'à ce qu'elles commencent à remonter, les sortir et les laisser refroidir, puis la deuxième à 185°C jusqu'à la couleur souhaitée. Et on arrête d'utiliser de l'huile, on est en train de manger des frites, on ne fait pas dans le diététique. Utilisez du blanc de boeuf ...

                                            Quand on fait des frites, on les mange directement, salées (dommage pour vos reins, c'est comme ça), et on ne se limite pas à une malheureuse sauce. (Testez la sauce lapin, made in Liège, vous serez conquis.)

                                            En résumé, n'essayez pas de faire dans la dentelle et dans le repas saint, c'est justement ça le plaisir des frites, de se faire une petite folie de temps en temps !

                                                                                              First of all, you need to rectify your title, the double frying method is Belgian, very Belgian, not French. I learned that when I came to Brussels. As a matter of fact, Fries are a Belgian invention, just like they gave us another wonder: waffles. Check it out.
